Where is the real dry-aged beef?
At DeBragga and Spitler we begin with beef a minimum of 2-3 weeks.
Under USDA inspection we age it in fresh air following strict
humidity and temperature controls. This dry-aging process intensifies
and concentrates the meat's proteins resulting in exceptional flavor
and texture. Flavor and tenderness develop for 10-21 days, as you specify.
